A Summer Veggie BBQ

If you don't eat meat it doesn't mean you have to miss out on a BBQ this summer. A BBQ doesn't have to evolve around meat. It can still be satisfying and full of flavour this summer. 

Here are some Veggie ideas to use on the BBQ grill this summer: 

Grilled Halloumi is always a BBQ favourite for good reason. The firmness of the Halloumi holds itself well over the high heat of the grill. It develops a golden slight crisp exterior and stays chewy on the inside. Grilling Halloumi is quick and easy, perfect for a quick bbq bite.  For even more flavour add lemon juice, herbs or even honey to make it more interesting. 

Veg skewers are a quick way to win over any vegetarian guests. Shop for a selection of vegetables and let the guest choose their favourite veg and put on the skewer. This makes it more interactive for them and easier for you! Favourite selections include peppers, courgettes, red onions, mushrooms, and cherry tomatoes. Olive oil is great to add to the veg before grilling or any herbs they prefer. Slightly char the veg over the grill and serve. 

The classic corn on the cob is a simple BBQ addition that works brilliantly as a vegetarian option. Grill the corn directly on the barbecue until the kernels are tender and lightly charred. Again to add more depth add butter, smoked paprika, lime, chilli, or grated cheese.

Instead of the traditional burger Pattie change to a large portobello mushroom. This will make an excellent alternative. Marinate them in olive oil, garlic, balsamic vinegar, and herbs, then grill until tender. Add it to a toasted burger bun with salad for the finishing touch. 

Aubergine is another good choice, when grilled it takes on a wonderfully smoky flavour. Thick circular or long strips work best and brush with olive oil. Remember to season generously. A great addition once cooked is tahini dressing, yoghurt, fresh herbs, or a spicy sauce for a simple but flavoursome side dish.

Stuffed peppers are a BBQ classic, as they are versatile and can make delicious bbq additions. Simply cut the peppers and half fill them with your favourite ingredients. Add to the grill until the peppers are tender and the filling is hot. If time is of the essence these can be prepared beforehand making them the ideal bbq dish when entertaining. 

Veggie BBQ Must Dos: 

  • Use plenty of seasoning: Herbs, spices, marinades, and sauces make grilled vegetables much more exciting.
  • Don't overcrowd the grill: Give ingredients enough space to develop those delicious charred edges.
  • Oil your vegetables: A light coating of oil helps prevent sticking and encourages browning.
  • Mix textures: Combine crisp vegetables, creamy dips, chewy halloumi, and crunchy toppings.
  • Prepare ahead: Chop vegetables and make marinades, sauces, and salads before guests arrive.

The key is simple: embrace the heat, don't be afraid of a little char, and season generously.
